La Corredora — Spanish for “the runner” — is a converted Japanese Kei coffee truck launching early 2027 near Austin's Lady Bird Lake trail.
We serve runners, cyclists, triathletes, and the broader community of people who organize their mornings around movement. The go-getters, busy professionals, and anyone whose day runs on momentum, from a quick coffee between meetings to a post-run refuel.

HOSPITALITY | Whether you've just crossed a finish line or you're still chasing it, we welcome you. We remember names, we ask about your race, and we mean it when we say "see you out there."
CRAFT | We take our coffee seriously, just not ourselves. Every brew is dialed in intentionally, from the grind to the pour, because the people we serve have trained too hard to settle for a bleh cup of coffee. Good enough isn't good enough.
APPROACHABILITY | No pretension in this coffee establishment. La Corredora is for the ultramarathoner and the person running their first 5K. Come as you are: sweaty, slow pace, half-awake..
GRIT | We built this business on wheels because we wanted to go where runners go. That same spirit is baked into everything we do: early mornings, hard miles, a refusal to take the easy route. We can do hard things. And we do.
COMMUNITY | Running is a solo sport with a thousand teammates. La Corredora exists at that intersection: a gathering point for people who move, who push, and who show up. We're not just selling coffee.

COREY COULL
Founder | Head of Product & OperationsCorey holds a Bachelor’s in Food Business Management from The Culinary Institute of America and has been brewing coffee for a decade at Blue Bottle Coffee, where he served as Senior Program Manager of Cafe Development overseeing new cafe openings across the U.S., managing real estate strategy, and launching B2B partnerships in domestic and international markets. Earlier at Blue Bottle, he led the Southern California region, managing six cafe leaders and 70+ staff while piloting a mobile ordering concept that drove a 45% increase in transactions in two quarters. Before coffee, he worked the floor at some of New York’s most respected restaurants: Gramercy Tavern, Untitled at the Whitney, and North End Grill under Union Square Hospitality Group holding positions from server to sommelier to manager.
Corey completed a 100-mile trail race in 2025 and just wrapped up his first Ironman in 2026. For La Corredora, Corey brings a culinary foundation, specialty coffee operations at scale, cafe development expertise, and the endurance athlete credential that makes the brand’s positioning authentic.
LAUREN COULL
Founder | Head of Brand & GrowthLauren holds a B.S. in Nutrition & Dietetics from New York University driven by her love of whole foods and has built her career at the intersection of brand, community, and growth marketing. She is currently Senior Manager of Marketing & Growth at RED VELVET, an Austin-based experiential marketing agency. Prior to that, she spent five years as Marketing Director at Baby-Led Weaning with Katie Ferraro, scaling the dietitian’s brand through social strategy, influencer partnerships and building a profitable online business. Earlier roles include marketing and influencer management at Walker & Company Brands, managing strategy for both Bevel and FORM Beauty, including FORM’s Sephora launch as well as a contract role at OpenTable running major metro activations and client retention programs, and Marketing at teapigs launching the UK brand in the US .
Lauren has run five marathons, two ultramarathons (50-mile and 50K), and two trail races. For La Corredora, Lauren owns the brand, the story, and the growth engine, launching a social presence and community partnerships grounded in the endurance authenticity she and Corey both bring to the brand.
